Clotted cream contains around 55% butterfat compared to roughly 48% in double cream, which means a smoother, more stable ice cream with no ice crystals and no ice cream machine required. Inspired by the no-churn clotted cream ice cream method from Sainsbury’s Magazine.

Ingredients

(Serves 6 to 8)

  • 300g Cornish Dairy Co Clotted Cream
  • 397g tin of condensed milk (full fat)
  • 1 tsp vanilla extract
  • Pinch of sea salt

Method

  1. Spoon the clotted cream into a large mixing bowl. Mix briefly with a hand whisk until it loosens slightly and gives a smoother consistency.
  2. Pour in the condensed milk and vanilla extract. Add the pinch of sea salt. Fold everything together gently until combined and smooth.
  3. Taste the mixture. It should be slightly sweeter than you’d expect – this is correct, as sweetness dulls slightly when frozen.
  4. Pour into a 1-litre freezer-safe container and smooth the top with the back of a spoon.
  5. Cover with a lid or wrap tightly with cling film. Freeze for at least 6 hours, or overnight for best results.
  6. Remove from the freezer 10 minutes before serving to soften slightly, then scoop and serve.

Tips for the Perfect Clotted Cream Ice Cream

  • Use full-fat condensed milk. The fat content is what keeps the ice cream scoopable and creamy. Low-fat versions will give you a harder, icier result.
  • Don’t over-whip the clotted cream. You want it loosened, not aerated. Over-whipping changes the texture of the finished ice cream.
  • Freeze in a shallow, wide container. The more surface area, the more evenly it sets and the easier it is to scoop straight from the freezer.
  • Store for up to one month. Press a piece of cling film directly onto the surface of the ice cream before putting the lid on. This prevents ice crystals from forming on top.
